Depending on the maker...I'd lean toward birch ply.
But I have been known to be wrong.

If you are all right about birch then I nominate it for a very good, if not excellent choice to build a guitar.

I don't see any Plys as I have been sanding it roughly for the first few passes; it looks all solid to me all the way around. The top is made of the same, as are the sides.

Poplar also has that greenish tint in areas, but I've never seen a poplar guitar.

Alder often has that greenish tint as well, but I'm going to guess poplar as well.

This is May-belle, not Harmony.

Yesterday I thought for once that everyone agreed that Birch is it. Shoot.

I've used poplar a lot and I have never seen it look anything like this wood, or be as hard as this wood is.

If there is a greenish cast, that is not the case 'in the flesh'. That is a trick of light or the color rendering on the website.

The color is tan, tan, tan. With those dark speckles thruout. I'm going to get a look at some birches this week since y'all--- who do-- think it is.

You can go to a large home building supply store and look. Both Lowes and Home Depot carry birch plywood. You can compare it there. It looks to be birch to me as well. I have never owned a birch guitar, but have used the plywood.
