This is a complex and simple question.
There is a sound that most of us have in our head for how an instrument is supposed to sound. As guitar players some find out quickly that they gravitate towards certain combinations of woods. But occasionally, you’ll get a guitar that SHOULD be right up your alley. But the neck is “off”. Or it has the wrong bass response. Or the first time you really lay into it it’s just “wrong”. I like Spruce/rosewood for example. But I have yet to play a J35 that had the sound I’m after. But J45’s, J15’s, and my G45 are “on point”. Or I have a general dislike for Mahogany or Koa topped guitars. They tend to have a harshness I can’t get past. But I really like the Taylor 324 and K24. There are guitars I won’t even pick up in a shop because I’ve never played one that “blew me away”. I once brought home a guitar that I was going to flip and double my money. My wife heard it after the initial clean and string change, and “advised” (SWMBO) me to keep it. Over the years since I bought it, I’ve become quite fond of it. You never know what will endear you to or put you off of a certain guitar.

It took me a couple years to get used to the neck on my OM, having always played 1 11/16” width. But the overall guitar was too great for me to turn down. I had to have it. Eventually I discovered that whenever I picked up guitars with the narrower necks which I thought I preferred, I didn’t prefer them. The bonding was now complete. Took me awhile.
