Not a TON of chords, but two I play a lot are Looks Like Rain (Weir/Grateful Dead) and Acadian Driftwood by the Band.

A *lot* at 21 chords according to the top rated Ultimate Guitar transcription.

That said, Rain Song by Led Zeppelin has it beat by 5 @ 26 chords.

I have an old Presbyterian Hymnal with an arrangement of "A Mighty Fortress Is Our God" that has a different chord change for almost every syllable. It's pretty fun to rip through it at bluegrass tempo, although you may have to be careful who you play it for.

Love seeing some Grateful Dead mentioned. I play a ton of their stuff...it has everything from 3-4 chord cowboy songs like Big River, bluesy fun like Black Peter, and really complex sweeping epics like Terrapin Station. There's really something for everyone, and I've never run out of fun and learning within their catalog.

Looks Like Rain is a challenging piece, and a great song.

Jimmy Webb songs seem to have dozens of chords, some are real finger twisters. One that I avoid mentioning at group sessions, but my playing partner loves singing is:
