Two definitions of double top: layered nomex top or two separate backs, so that the inner one can vibrate without being dampened by the player's body.

Well, In general of course, Spruce is brighter and depending on how the double top was made they tend to be brighter still. Given just the info you provided, I would think Cedar for a nice contrast in sound quality.

I own the C-10 Crossover - that's the one with the slightly reduced nut width and radiused fretboard. It sounds great and looks beautiful, but if it were a toss-up between this and the cedar-mahogany version, I might be hard pushed to choose one over the other. I do like the fresh white appearance of spruce and the lovely dark rosewood, though. The C-10 also has an ebony fretboard; I think the cedar version uses rosewood.

I'm looking into the C10 Parlor Cedar and rosewood.

The spruce darkens in time and looks beautiful.

I have both c-10 cedar and spruce. I bought the cedar first and liked it so much I wanted a spruce also. After about a year I bought a spruce top and the very first thing I noticed was the louder volume in general, and especially the bass. Now a couple of years later I rotate them nightly because I really like them both. So the spruce is (as expected) louder but for some pieces I prefer the cedar. This probably doesn't help you much.

With the other guitar being a double top spruce, I would also do the cedar.

I owned the C-10 spruce and rosewood and a C-9 cedar and mahogany at the same time. I preferred the cedar mahogany tone just a little bit more. I kept the spruce top......long story but both were very good sounding guitars. Just personal preference really

This is my own situation. It's very helpful, in fact. I bought the cedar first, then the spruce. That's the only really good solution!
