I eat three olives every day for lunch. They are usually swimming at the bottom of a vodka martini! Just kidding.
Back when I was eating bread and trying to eat healthy I found that I loved to make paninis. Basically, a fancy grilled cheese with veggies inside. I would lightly coat the outside with olive oil (healthier and butter) and then use a flavorful cheese like swiss and add pretty much any veggie I want. Then you grill it on both sides. Doesn't need to be refrigerated so you can eat room temp or if you have access to a small toaster oven at work just toast it for a few minutes to warm up. I'd use things like avocado, jalapenos, baby spinach, red peppers, tomatoes, pickles, feta, black olives, mushrooms - pretty much anything I could find in the fridge. Even a fried egg works. Tons of variations and flavors. |

Back when I was working I could never carry a lunch. It just was not satisfying. I always grabbed a deli sandwich somewhere and wolfed it down. For several years I worked evenings, and though I only had a half hour I could swing by home and take it with the family. Later I had a job with an hour lunch break and even that hour was not set in stone, so we went out to eat every day. Sometimes they were business lunches. That can get tiresome as well and expensive.
In retirement my wife and I have taken to eating our main meal midday and eating light in the evenings. Sometimes, if we are planning to go out for supper in the evening we will do a brunch around ten instead of breakfast and lunch. Otherwise we seldom do much for breakfast. We are not early risers like some older folks are. We usually get up too late to eat breakfast.

Leftovers 99 times out of 100. With just a stupid sandwich running $9 and up in my neck of the woods and my boss' lousy pay scheme it's simply not cost effective to buy lunches. Sometimes I'm amazed I can afford to eat dinner at all so making extra is tough but always valuable the next day (or longer with the freezer).

It depends. I'm retired so I eat at home. I don't eat breakfast. I mostly make a salad using a lettuce blue cheese dressing, sliced up pieces of off the bone ham, grated cheese and croutons. I might add other stuff if I'm in the mood. That's about four or five dats a week. Other days it's tomato soup and grilled cheese. Once in a great while it's leftovers. But I really need to cut back and eat less and cut out more carbs.

I had to go to South Bend, Indiana for work, years ago. We went out for lunch everyday and I got introduced to Potato/Tomato soup. It is awesome- imagine my surprise when I asked the waitress about getting the recipe and she replied, a can of tomato soup, a can of potato soup and 2 cans of milk
I often have it for supper now says. |

I was a little surprised when they said there was an egg in there. I hemmed and hawed and she said she could put them on the side. I blurted out "over medium" before I thought better and said "aw, make it like normal"... so the eggs in mine weren't scrambled, there were two fried eggs in there with some runny yolk left... ... -Mike |

I don't know ; I guess I'm losing my appetite. The only thing appealing is junk food[which I avoid]. but it looks so good. Not into preping ,especially salads. guess I'll stick with PB&J.

Sometimes I just open up a can of tuna or chicken breast pieces and eat it out of the can with nothing else.

I’ve gone through probably 5-10 lunch box menus over the past 20 years. The past several years I’ve been very happy with this:
1 hard boiled egg 1 apple Mixed unsalted nuts: walnuts, almonds, pecans, cashews, pistachios. I mix the nuts about once a month into jars. Each jar lasts about a week. Whenever I’m about out, I just bring another jar to work. I hard boil two weeks worth of eggs whenever I’m about out of hard boiled eggs, and put them in the fridge. Every morning I grab one egg and one apple. Minimal preparation effort, low cost, supplies all the energy that I need, no mid afternoon carbohydrate drowsy hangover. |
