You haven't defined the goal of your categorization, which makes commenting difficult; especially if you want to ignore Latin names. That sounds as if you aren't interested in categorizing by genus.

FWIW, Pao ferro and ziricote are not rosewoods, and none of the African "mahoganies" are mahoganies. That is, unless you have some basis for categorization other than genus; in that case you may group them differently.

Koa and Tasmanian Blackwood are Acacias.
Granadillo is a rosewood and so is Palo Escrito.
Bubinga and Ovangkol are Guibourtias.

Not sure about Padauk and the others you mentioned.
Maple is Maple. The is sugar Maple, Big leaf, European. All with various figure.

I kept reading things like "X wood is actually a rosewood". I read Luthiers making the point to correctly categorize the wood as they and others commented on how it sounds, how stable it is, how it looks, etc. I just thought it would be cool to have a list and I thought maybe somebody had a link.

The categorization has already been done for you. That's what the latin names are for! For example, once you know that true rosewoods belong to the genus Dalbergia, you're on your way.
