I would really really encourage you to give some consideration to one of the Martin 000-28 Authentics. I just wrapped up a very similar hunt to yours, and I tried both Collings and Santa Cruz (no Taylor though).
Collings and Santa Cruz both make wonderful guitars, but the Authentic that I ended up with is just in its own league. I'm sure there are equivalent guitars from those two companies out there, but I've never been lucky enough to play them.
