Default Interface vs "cheapo" USB guitar cord

I mess around w garage band and both my electric and acoustics, but I never made the move to an actual interface....I use a 40 dollar cord that goes to USB from guitar center.

I'm no sound engineer, but the latency isn't all that noticeable, but it's there..

Will the interface make so much difference? Is it the only difference I'll find?

And while on interfaces, would you recommend the apogee one or the duet?

In order to reduce latency, plugging headphones into the interface rather than into the computer's headphone is important.
