Default Cost to replace nut and saddle with bone

What might be the range for a luthier to do a nice pro job of swapping out these parts?

The Chinese-built Yamaha Red Labels come with plastic parts for these two elements.

Depends on pricing where you live, but I'd guess about $150-200 including the cost of materials. If you provide your own blanks I imagine the cost would be cheaper.

Default A little less I think.

I’d say around £70-80. Bone blanks are inexpensive but it does take a little time and effort to make an accurately cut nut and a saddle with intonation adjustments for each string. Materials would constitute less than £5 of the cost.

This should include neck relief adjustment if needed, but not any fret dressing.

Bob Colosi sells bone bridge saddles and nuts for about $28 each. His parts are first quality.

If you are happy with the current set up, Bob could duplicate you current Saddle and/or nut in bone. It would save you a few bucks. If you had a shop do it for you A new nut would run you between $60 and $120, depending on who does the work. A saddle a bit more. I would say between $75 and $150.
