What if I told you can cook a Packer Brisket in under an hour...
This is bat guano crazy... I've "perfected" my oven Brisket, but it's a minimum 4 hour cook(almost always 5 for a 12 to 14lber), and it comes out as good as a full smoke in terms of texture. But of course it's a baked brisket, so if you want a true "Texas brisket" you will be sorely dissapointed! Let's just say you'll want your salt shaker and a couple of sauces at hand when you eat it.
But back to the title of this video... Bear in mind as you watch this that he has not done any experimentation to perfect this. I can think about 3 or 4 things he could have done to make a difference.
