Default Tempo Issues Playing Slide

Hey Folks,
Looking for feedback on how some of you work out tempo issues.
I find on certain types of songs involving slide playing ( think Charlie Parr style), I might start at 120bpm and end up at 200bpm.

Working with metronome helps but once I’m at the gig the freight train starts up.

I've been practising Sylvester Weaver's Guitar Rag, playing along with the recording, and he sure speeds up too!
If you can be more aware of it as you're playing, maybe you can rein it in a bit... if it's any consolation, Charlie Parr probably picks up speed as his songs go on.

Yes that is true. I see players at pro level do same thing. I’m at a point where I just try to keep it from getting out of hand.
I had read that when you hear a old blues on the 78s, they sometimes sped up to fit the song on the disc.
