We've not got it too bad on certain models in the UK at least, can't speak for Germany. Guitar Guitar had the D15m burst on sale for £999 recently, that's about 1200 Euros. That's less than I paid for my 00015m second-hand (£1050 including £150 store credit on a Seagull).

The Gibson G-45 I just bought is almost exactly the same price as in America (£760 compared to $999).

Worth checking websites. GAK, Rich Tone Music and Guitar Guitar has some great deals at the moment. Guitar Guitar has a Taylor sale on with some very exotic models at up to 40% off.

As there is no specific purchase mentioned:

I have found my Yairi.
I’d likely either find my Grail Yairi (A DY62c), or I would use it to buy the “bookend” WY1 to go with my GY1.

Some forum sponsors will do better for a brand new one than that store demo. I was quoted about $1270-1275 by a couple and then walked into Vintage Instruments in Philly and they had a new marked at $1275 until it walked out of there with me later that day. An 000-15M could likely be had for $1150, but the 12 fret SM is only a little bit more than that. And for my money, a better sounding guitar (and playing if you like a wider nut / string spacing).

I'd probably find a good used J-15 or whatever brand you like and spend it all on 1 guitar. It would be hers and yours.

Name it after her, and keep it for life.

What a nice gesture on her part.

I'd get a Ouija board and try to ask my aunt. There are too many great choices. I love my Eastman dread. You could get that and a lot of great accessories.

If it were me, I would go find the best USED instrument that I was interested in and find one in the condition price that is good to excellent, even throwing some of my own savings into it. My experience has been that the inflation of goods, both new and used outpaces safe, fixed interest securities. I think in all the years I've been playing, buying and selling used instruments there is only one where I took a small loss on... and usually made money in excess of the rate of inflation. I consider my used instruments not an investment, but a currency hedge. JMO
