If I see a guitar that I like and fits me and I can afford...I might buy it.

Don't you just hate figures of speech and/or vocabulary sometimes? Why wouldn't anyone "deserve" the finer (not to say finest) things in life?

I couldn't justify spending even 850€ on another guitar right now because the 500€ one isn't limiting my playing yet, and I just don't know for what other more urgent matters I'm going to be needing my savings money.

But I'd say that anyone who can "miss" the money and appreciates luthier build instrument is more than justified to buy at least one of those (and even has a bit of a moral obligation to do so, out of altruism ). Doesn't matter if you've worked hard to earn that money or if it fell into your lap...

I may be the exception to your assumption that it's one or the other. I enjoy most playing guitars that I have built myself. I have 3 acoustics, (#4 on the way)2 reso's, and an electric/acoustic hybrid that I use at church. I also have a 1954 Gibson J45 that sees the inside of a case way too much. Honestly, I just like playing mine more.

But really, it's not necessary to have a high end guitar

I live in a big city where most people's really nice guitars never leave the house. They show up for gigs with the Takamine or low-end Taylor they won't cry about when it eventually gets stolen or stepped on.

In my midsize hometown, people mostly have one good-to-very-good guitar and they take it everywhere.

Quite a few own both cheaper and high-end guitars but luthiers like yourself are a gifted and rare breed. I wish I had that talent too.
