Default Help with making cutaway

I decided that for third guitar I would love to make cutaway - but I never done it.
I was looking at the cutaways in store - I like the smooth venetian not the other pointy one.
The bending is not a problem, but I have questions about the neck area. Some use normal heel and some use a wide heel that is straight and as wide as the whole fingerboard and then the cutaway flows from it.
What are the chalenges to do a cutaway? (Appart of the obvious bending) How should I modify my process in order for cutaway?
Any advice/pictures appreciated.
