Default Belly on new guitar

How much belly is acceptable on a new guitar? I have a new Alvarez and it has about 3/8" with a straight edge.

That sounds pretty high. How humid is it?

The best way to judge whether a guitar is likely to survive long term is to measure the bridge rotation under tension. 2 degrees or less is good.

Lay the guitar on its back, and attach a ruler to the saddle with blu-tack putty or something (the ruler should be in-line with the strings, not sticking straight up in the air). Rig up some kind of reference point above the guitar, like a desk lamp, so you can measure the distance from the reference down to the ruler ends. Then loosen all the strings, and measure the height of the ruler ends again. One end will go up and the other will go down. You can calculate the angle using a bit of trigonometry: inverse sine ((change at left end + change at right end) / ruler length)
