Without knowing for sure, not having been there, my suspicion would be that the dovetail became standard in a mass production environment because it’s fast and easy once your jigs are dialed in. Set the angle, route, floss, and done.
I know my butt joint takes far longer in the flossing stage than a dovetail what with having to work around and with the bolts. But I choose it for future friendliness, not ease of production... |

dovetail provenance
I think dovetails were also devised at a time when common nuts-and-bolts-and-threaded-inserts-and-washers didn't exist for common use. So, as Ed suggested, manufacturers created the dovetail which used no hardware. And no hardware to purchase or inventory. Kept the parts count low. And now we have the church of the living dovetail.
