As part of his Homeskoolin' series, Tom Bukovac took his camera into the repair department of Gruhn's and was given access to all the techs. He went from bench to bench seeing what the guys were working on, from a turn of the century (20th) pyramid-bridge seven-string acoustic to a '59 Les Paul. There are many, many examples being shown, mostly acoustic, but it starts out on the '59 Les Paul. You learn a lot about the process of neck resets as you go in. They answer, "How long does it take to do a reset on a Martin or Gibson?" and "What will it cost?" as well as, "Which guitars are the hardest to get the neck off of?" You'll probably want to click through and watch this on YouTube in order to get a large picture. Enjoy and learn!

Be a luthier probably doesn’t pay that great, but man, I wish I loved what I did for a living.

I found it interesting when they mentioned that the cheaper the instrument, the harder it is to get a neck pulled off and in general, the more expensive the instrument is the easier it is to repair. I am a retired bicycle mechanic and it is exactly the same with bikes, high end stuff is much easier to work on than the cheapo Huffy. Makes perfect sense.
