Default Cow bone verses Water buffalo/ox bone

I am interested to know if anyone has done comparison testing between Cow bone and Ox bone(which I believe is Water Buffalo bone) for saddles and nuts.
Some lutheir companies sell cow bone, and others sell Ox bone.

One produces milky soft tones and the other is more beefy - sorry, couldn't help myself.

I am NOT any kind of luthier, but I have made 6 sets of "bone" nuts and saddles from deer antler. There are some luthiers who also make antler saddles and nuts commercially. Have no idea what the different in tone would be.
