I have two to be honest. Both because they were had at used prices.
The first is my 1974 Guild D25M. I paye $700 for it about five years ago in as close to mint as a 35 year old guitar could be. It plays so easy and sounds absolutely stunning. Second is my Seagull. It’s an Artist Stufuo Burst 12. Again, used at $800 it was a steal. The action on it for a 13 is wonderful and it has such a sweet sound. Being a flagship model it has all the bells and whistles to make it look as nice as it sounds.

My 2006 Larrivee OM-03R. For various reasons:
1: it was a gift. That makes it instantly precious. At the time IIRC the street price was $850-$925. 2: it was EXACTLY what I wanted after falling in love with a "seasoned" (NOS) demo in a store that subsequently closed. 3: I got a GREAT deal on a K&K Pure Western mini with accompanying K&K Pure XLR Preamp ($150 all told) and installed it myself, just as I did the bone saddle from Bob Colosi. 5: it is built like a tank. I've played it so much over the years that it annoys my family and brought my husbanding/parenting priorities into question during a couple of particularly "impactful" displays of frustration. Thankfully, it takes rough handling very well - and rosewood is very easy wood to work with with regards to repairs. The use of laminated birch plywood as a tail block is also ingenious - not to mention that Larrivee uses an oversized tail pin which removes the hardest step for adding an endpin jack when installing a pickup. My only gripe is that the Larrivee flat top case is built along the lines of Martin's 300 series cases which are not the best and wear too easily. I've countered by adding several redundant means of humidification in the case and storing it in my basement behind locked doors! 6: in addition to the laminated birch tail block with oversized end pin hole, the heavy construction is also beneficial for conversion to an electric/acoustic. Unplugged, it breaks up when played hard but plugged in the smallish size (when compared to a dreadnought) and the symmetrical bracing make it very easy to adjust the plugged in tone with preamp EQ settings. I have used this guitar in its current configuration for the past 10 years in a church praise band hooked up to a 40W Fender Hot Rod Deluxe electric guitar tube amp (single 10" cone) and the K&K PWM gives it plenty of bass that it otherwise lacks unplugged. Conversely, the guitar is comfortable enough to play on my couch at varying volumes and techniques and IMO balances my voice without having to strain. Ten years of playing it has also allowed its unplugged voice to mature as well.

This is a tough one to answer.
My Alvarez AD60 that I got a few years back as the Stupid Deal of the Day for $199 punches way about it's weight class. It badly needed a set-up (particularly at the Nut), but sounds and plays quite good now. On the higher end, I was able to pick up a NOS (w/ Full Warranty) 816ce for $2100. It would be hard to out-do that guitar at that price point. It was a couple years old and needed some pretty significant cleaning, but it's in excellent condition now.

This is going to sound a bit counter-intuitive, but for me, it's the one I paid the most for - my D-28 Marquis. My Taylor and my D-18 are great guitars, but once I pick up the Marquis, it just blows them away.

Not acoustic but I picked up a 1968 blonde Tele for $250 that is amazing. Road worn and filled with years of Mississippi Juke Join VooDoo. Had it appraised by Gruhn for well over 10x that price but can't imagine being without it. The great musical places we've gone over the last 25 years...probably comes out to about 50 cents a trip. Sometimes you just get lucky.

I bought a '75 Guild F50 at a yard sale for $125. I couldn't get that in my car fast enough...boy, that guitar had tone-a-plenty!!

Seems like the intent is over achiever based on price...Blueridge BR-160. Mine is a 2006, bought new in 2007 for $650. Still have it and doubt I ever part with it. The playability and sound are outstanding. Just a great guitar, regardless the cost. And, my Larrivee OM-03. Italian spruce top. Everything else is standard. Been loving her for 7 years. New for $1100.
