Hard maple
Hard maple is definitely slower to sand down or carve than softer woods but can certainly be worth it. I've used locally sourced hard maple for sides and backs. I use soft maple on other woodworking projects but not guitars.
I've heard it said that maple gives a brighter tone to the guitar. Taylor Guitars has lots to say about how they think the different tone woods affect the sound. |

Many of my mandolin family instruments have big leaf maple - a local soft maple here in the PNW. It sounds great to me.
