Hey, I am of limited experience, but will offer an opinion nonetheless. I've built a few kits now, and enjoyed them all. The finished instruments actually turned out pretty good, and (combined with that 'child 'o mine' vibe) have turned into my favs to play. I never, ever imagined investing in all the stuff needed to build a complete acoustic guitar from scratch, but I can see how that would be even more rewarding if you were that far down the rabbit hole you could do it.

So my advice would thus be to just take the plunge and try. Buy a kit and build it on your dining room table. Buy or make tools you need as you go along. It'll be a blast. And if you get the the finish line and eventually get to play the thing, guaranteed you are going to love it.
