Lots by Richard Thompson, both acoustic and electric. Two that immediately come to mind are the intro to The Calvary Cross and the break in Shoot Out the Lights.

Robbie Robertson's solo in Bob Dylan and Eric Clapton's "Sign Language" fascinates me, such a unique style.

Have to add Mark Knopfler's playing in "Brothers in Arms". It always gets me to the point I could cry. He's really telling a story with his guitar.

Mark Knopfler's short solo in Monteleone is elegant.
