"Highway Patrolman"--Bruce Springsteen ("...while the band played 'Night of the Johnstown Flood' ")
"Chinese Cafe"--Joni Mitchell (has quotes from "Unchained Melody")

And then there's the subcategory of Songs that Mention Other Bands (or Even Their Own Prior Albums):
