Default What are you canning!

This time of year is when all the fresh local berries, tomatoes etc.. come out.
Today we canned raspberry jam. Next is Strawberry and blackberry jam then tomato simmer sauce and some corn relish. What are you canning?

Tomatoes and green beans soon. It’s corn on the cob season and I couldn’t be happier about it.

Tomatoes, fermented salsa with jalapenos, serranos, chile pequins, scorpion peppers, fermented refrigerator pickles, fig ginger serrano pepper preserves...

Hey Marty - what a great use of time. What's tomato simmer sauce?

My father makes his own diabetic jam and he really enjoys it.

....I have put up 24 half pints of boysenberry preserves...and 24 half pints of Blueberry preserves....this week I will put up about 20 quarts of dill pickles...and in a few weeks I’ll do a dozen or so quarts of dilly beans....I hope to can some homemade salsa this year too...I have also frozen 8 pounds of blueberries and when my Roma tomatoes are ripe in a few weeks I’ll cook em down and freeze several gallons of sauce...

I don't "can" but I've got three spaced crops of french beans. 1st plot is finishing now - most frozen, and secong now looking good, with third plot just starting to flower.

Corn cobs looking nearly ready. Courgettes going crazy, (giving some away), first carrots about ready, second crop looking promising.

Calbrese tent has been vandalised (fox? rats? ) but still hopeful.

Great year for asparagus, but over now.

Toms and peppers - still slow.

Hi Dru. Its made from tomatoes (peeled then blended), assorted herbs etc..Basically a pasta sauce. I add garlic to the sauce when ready to heat up and eat.
Diabetic jam? I know the berries have natural sugar, what else does your dad use?

Kids who spray paint graffiti... Oh wait... Canning! Peach chutney with just a kiss of heat from red Jalapenos.

we did a dozen pints of tomatoes last night. We'll do another few rounds of that as the tomatoes ripen.

Just made my second batch of peach rum jam this morning. Made blueberry last week. Also froze some peaches this morning, if that counts.
