From some of her other videos it looks like she used to play an 8 string uke with all except the lowest doubled strings removed and eventually was able to have some made that way, making them a 5 string uke.

she plays custom Kamaka ukes. the two current models are 4 string with a double course on the one set.

she grew up and lives in Hawaii, knows the Kamaka shop owners since just a few years old and has performed for a long long time. check out her website, quite an amazing musician.

That makes it a 5 string. We don't call 12 string guitars 6 strings with double courses even though that's how they're played.

Like I said in my earlier post she used to play 8 string models with only 5 strings in use and is now playing a custom model that only comes with 5 strings.
