I don't "enjoy" cooking like some do, however tonight was go/no go for a couple of pounds of chicken in my fridge. I find cooking a chore. But I bought a crockpot and a Ninja foodie grill a couple of months ago and realized that it's also not that difficult if I follow a recipe. I love Beyond Meat burgers - with Montreal Steak seasoning - btw; they come out great on the Ninja grill.

I'll probably get a pizza from a local pizzeria tomorrow night and freeze some slices; that will help me maintain a balanced diet.

I brought home some big shiny crunchy poblano peppers from
the store and my wife stuffed them with black beans, rice and cheese...
There was some tomato in there too...

Forgive me for overlooking that possibility. We’ve been fortunate on that front here in Minnesota - comparatively little change in fresh food availability at this point.

After a nice walk in the quiet city to a little market, we stopped in to The Mellow Mushroom for take out. Yum.

When I get my butt in a bit I’m doing cast iron flashed filets, sweet potatoes and a green salad. And another gin and tonic.

Today worked out well. We had groceries delivered for the 1st time. A salmon steak, milk and yogurt, and some fruit and vegetables. The farmers market in the neighborhood is bringing vegetables and cheese this weekend. Will try and order from the grocery store Tomorrow for a delivery next Wednesday. With the weather turning really nice today, Decided to fire up the grill for dinner. Had salmon, grilled zucchini, and rice. We always made dinner important function, but in what pretty much amounts to isolation, we are doing our best to make it at least somewhat special most every day.

Default Whats for dinner?

Second day of a pot of homemade chicken soup tonight - froze the remaining chicken from the jumbo pack, probably make arroz con pollo in a couple weeks; made it to the local markets at 6 AM a couple days last week so I managed to stock the freezer pretty well, all things considered - got a rack of boneless country ribs on the agenda for the weekend, veal goulash with buttered noodles sometime next week, looking to score some peppers at a decent price to go with the family pack of sausage, ground beef that could be used for either meat loaf or a pot of meatballs (if I can get some decent fresh basil), franks/burgers for in-between. Quite frankly, we're eating better since the lockdown began - band rehearsals/gigs are a no-go, our doctors have cancelled all but the most critical visits, non-survival shopping is effectively shut down (missed our monthly band roadtrip to Sam Ash/GC), there's no live entertainment - so we're off the grab-&-go wagon for a while, not to mention catching up on some much-needed rest...
