I thought someone should mention the possibility that the wood changing color is an erroneous assumption. Lacquer and varnish both darken with age, so it could be the finish, not the wood, that's changing color. I'm not supporting that as the cause, just mentioning it as a possible contributor.

I scanned the thread title and thought it said "Ditka" instead of Dark sitka.
If it were Ditka spruce, it would have to be "Da Bears"-claw. Sorry. |

The Italian Alpine Spruce top on my Martin JDP II has darkened up considerably over the years.
The contrasting timbers in the rosette have changed colour too. The bridge on the 2nd picture is darker because I treated it with Music Nomad F-One conditioner. I keep the guitar on a stand in my living room - not in it's hard case.
