I love the darker color of my Taylor. I’m not a big fan of the bright spruce.

I thought someone should mention the possibility that the wood changing color is an erroneous assumption. Lacquer and varnish both darken with age, so it could be the finish, not the wood, that's changing color. I'm not supporting that as the cause, just mentioning it as a possible contributor.

Sorry, LR - that’s wrong. My two current Martins have Aging-toner and have darkened from a pale gold to a beautiful dark gold over the time I’ve had them. The OM-28 Marquis which I bought new in 2007, and traded last year, did likewise.

Martins with Aging-toner darken exactly the same as those with no toner, but they have a bit of a head-start.

I scanned the thread title and thought it said "Ditka" instead of Dark sitka.

If it were Ditka spruce, it would have to be "Da Bears"-claw.

The Italian Alpine Spruce top on my Martin JDP II has darkened up considerably over the years.
The contrasting timbers in the rosette have changed colour too.
The bridge on the 2nd picture is darker because I treated it with Music Nomad F-One conditioner.
I keep the guitar on a stand in my living room - not in it's hard case.
