Default Using extention speakers for Genz Benz 200 Stereo in the best manner

I have a Genz Benz 200 stereo acoustic amp and I have the two extention speakers. I am playing in a small motel ballroom in a couple of weeks for about 50-75 people at dinner tables. I have used my Genz Benz many times but I am not sure the I am using the extention speakers to their best advantage. Most of the time I use them 25 feet on either side, one time I put my amp on one side and the two extention speakers on the other (trying to give each area a stereo image). I actually think that using the amp as one cluster and the two extention speakers as another cluster actually sounded better but so hard to tell given you are not out there during the performance. I am not a sound person at all. What would be your suggestion to get the best sound to a medium size rectagular meeting room.
