It just takes a bit of time to balance your singing with your playing at the same time. There are lots of tips to help you along, but it really comes down to putting in the hours of doing it to achieve a balance. For me it happened naturally over time, and it was not a conscious thing. I was trying to be a guitar player, and the singing part (in my case) was simply an accompaniment.

I have very responsive guitars (because I don't play very heavily), and that has caused issues when I try to sing/play without a PA.

What I've done for recording my work tapes is to use a very small-body guitar (a Martin 0-17) and put some strings on it that are half-way between nylon and steel (probably really 3/4 the way towards nylon, IMO), and play as lightly as I can. And *try* to sing louder, too.
