The spacing of the strings at the right hand - or saddle spacing. The Eastmans and Furch/Stonebridge guitars both have only 2 5/32 I believe - the Martin probably has 2 3/16 (1/32" wider) and not sure about the Guilds.
I prefer 2 5/16 spacing, but can get away with 2 1/4. Of course it all depends on what you are used to. The more I've relied on my right hand, the wider spacing made things much easier. I also prefer wider nut width and string spacing. (1 13/16 or 1 7/8 with at least 40mm spacing)

Help me out to choose my guitar
If it’s a responsive finger style guitar you want that’s really good value for money it’s hard to beat Furch. Even if you go down to less expensive models the tone and build quality are still very strong. String spacing on mine is very amenable to finger style and I’ve got very large hands.
If instrumental, finger style guitar were my main interest I’d probably play my Furch exclusively (in my case, that’s not my main interest though...) Good luck. Let us know what you choose?

Help me out to choose my guitar
I have recently gone through the same decision making procress - I narrowed it down to three Furch models - G23CRC / OM23CR / OM24SR and although I liked them all, I ended up with the spruce topped OM. Like you I expected to like the G23 the best but in fact it was my last choice after the two OM’s - I liked both very much indeed and found it hard to choose between them. I initially chose the cedar top but then returned it and took the spruce home as I just found it to be more resonant and offering more clarity. Pricing - you can pick up a G23 or an OM23 for £1500 if you look around, with a 24 nearer £1700 or so. Good luck, they are wonderful guitars.

Please try Yamaha's LS16R/M A.R.E. before dishing the cash out for the ones in your list.
