Sanding down the saddle
My strings at the 12th fret are 4mm. I think 2mm will be perfect, so do I sand off 4mm on the saddle? The saddle sets pretty high so there’s plenty to remove. Thanks

Go a little at a time. I suggest taking a magic market or pencil and color the bottom of the saddle so as you sand you can make sure you're sanding evenly. Once you sand all the color off evenly, measure and repeat as needed.

STOP.
Take it to a tech for a proper setup. There's more to a setup than the saddle. What about the neck relief and the depth of the nut slots? Are you just going to ignore those? If your relief is out of wack and the nut slots are too high, sanding the saddle won't help much.
