What a great thread!

Here's my set-up:
Acoustic guitar --> Korg DTR-1000 Tuner -->Aphex 104 --> TC M300 --> Ultra Sound amp. In my church setting, the amp is used as my monitor and the direct out from the amp goes right to the board.

Thumbs up Keeping it Simple

Taylor 814 ce with ES for standard tuning balanced into a Bose L1 with single woofer
Santa Cruz D-TR with LR Baggs I-MIX for Alternate Tunings.
Shure SM-58 vocals

No effects, no compression, nada ... sounds great!

Taylor 810 & Flatiron F-5 mandolin ---> UB802 Eurorack mixer --->
into PMX880 Behringer 8 channel powered mixer 800 watts bridged ---> two 15" JBL Club Series mains and two 12" JBL monitors

vocals ---> Shure SM-58 mics straight into the PA

The small Eurorack mixer is on a small stand and gives me some control without having to walk to the powered mixer to mix sound levels from mandolin and guitar.

Taylor 710LTD with K&K Trinity (Pure Western, mini-mic and belt pre-amp/blender) --> Mackie 808M --> a Pair of Bag End TA1200 speakers

vocal mic, usually a Shure Beta 58

I usually use just a smidge of reverb on guitar and vocals, but I've been known to go with both signals totally dry. Depends on the room, outdoor setting, etc.

I've just started messing with a Boss Loop Station... that goes from a send from the PA and loops back in, so it's only in the signal chain when I want it. I'm giging with it for the first time this weekend.

With other PA systems I usually go from my K&K preamp to a LR Baggs PADI (unless they have a DI there already) and let them deal with it.

Kevin Ryan Cathedral -> Baggs M1 -> Baggs PADI -> either an AER Compact 60 amp for smaller venues or a PA for larger venues

Hamer Duotone (has both piezo and 2 humbuckers, w/two output jacks) >
Humbuckers > TS7 pedal > one channel of AER > PA
Piezo > Boss AD8 > other channel of AER > PA
At the flick of the toggle switch, it goes from clean acoustic to sustained overdrive (or both)

At church:

Collings OM2H w/ PUTW #54 ---> Presonus AcoustiQ ---> House PA

My Peterson VS-1 plugs into the Presonus tuner out & remains on all the time.

Smaller venue - same setup but either split to house PA & my California Blonde or just roll with the Cal. Blonde (still using the Presonus though).

I also have a Sennheiser (however you spell it) wireless that I use on an "as needed" basis, but I prefer to skip it and use a good cord when feasible.

I just ordered a Baggs M-1 for my old Martin too, I'll have to play with that one a while and see what to do with it.

Ovation 1861 Balledeer (or Gibson SG when doing electric) into Digitech RP2000 into Mackie 808S with 12 inch Yamaha Club speakers --I use the Mackie in Stereo.
I also use the "Mixer out" on the Mackie to a crossover that selects the low frequency's to a Peavey power amp to an 18 inch Yamaha subwoofer (yeah, its a cannon )
Also Digitech Studio 200 effect unit on the Mackie effects loop for vocal, mostly a Seinhieser mic.
Various other mic setups for 12 string acoustic, mandolin, banjo, harmonica, tambourin, CD player for recorded stuff, etc.

It depends on the size of the room.

For small coffee shop venues:

Taylor 615/355/712 > Boss TU-8 Tuner > DanElectro Chorus >Fishman Pro EQ> Genz Benz Shenendoah 100.
Vocals: Shure SM58 > Shen 100 with a room reverb. I also run a single monitor off the ext. speaker jack.

For bigger rooms, same setup but through a Peavey XR600F head and Peavey 112 cabs and 112 non-powered monitor/s.

For solo fingerstyle acoustic guitar (no vocals):

Guitar: Tippin OMT, EIR/alpine, -41 style;

Pickups: (i) Baggs M-1 and (ii) PUTW #54 blended via PUTW Stealth preamp to mono to tip, and (iii) either a Groove Tubes GT44 external tube mic (direct to SPS-1, channel 2) or internal Joe Mills internal mic to ring;

Preamp: Pendulum Audio SPS-1 with pickup/internal mic preamp module (plugs into guitar), sends the tip to channel 1, internal mic to channel 2 (if used);

Effects: TC Electronics M2000;

Mains: Pair Daedalus S-81, with Hafler P3000 stereo power amp;

Monitors: Pair Ultrasound 50E;

Room and/or monitor eq: Rane SEQ 30S; and

Misc: Korg rack tuner, Furman rack power strip, speaker stands for the S-81s, amp stands for the 50Es, mic stand, lotsa cables.

That’s the full rig. Depending on the location, I can do a full setup or a smaller configuration. For example, I can use just the Ultrasound powered 50Es on the speaker stands, leaving the Daedalus, one 4 space rack (containing the Hafler and Furman) and amp stands at home. I can use just the other 4 space rack (housing the SPS-1, M2000, tuner and SEQ 30S) for a house PA. I’ve also got a Baggs Mixpro in my guitar case. That with a cable will do in a pinch.

I forgot to mention that I have two roadies - my 18 and 19 year old sons. Often, they'll do the loading, unloading and setup, although I usually have to break it down and get the rig back home.

Dave Schneider DS-1 Small Jumbo with a K&K pickup. Bose P.A.S. system. The acoustic is run into a Avalon Design U5 D.I. then into channel one. Channel 2 is vocal using a Sure SKM32.
