Default Proper Thickness for D or 000 Style Builds for The Tree Mahogany

I've asked this before for normal acoustic builds, but I was wondering if the builders' answesr would change on the proper thickness for D or 000 style builds if they are using The Tree Mahogany, quilt or tortoise shell pattern wood?

The tortoise shell in question is 123 thousands of an inch and the quilted mahogany backs 120 thousands to 150 thousands of an inch. The widest sides are 125 thousands to 147 thousands of an inch.

I was told there maybe an issue with the tortoise pattern Tree mahogany not being stable enough for an acoustic due to the say it is cut to achieve that pattern. Looking at the particular backs in question I can see part of the grain is slab cut, but the other I can't see the growth rings to see the grain direction, but the boards seem solid enough.

Does anyone think there maybe issues with it?
