Congratulations! I think the Grand Symphony is one of Taylor’s best shapes.
It was originally designed with Medium gauge strings... I have one of the Cedar/Rosewood GS 7 models. Mine has a 3 piece back.

Well done for your perseverance and so much the better if you have managed to save your guitar.
I'm in the same situation as you with my 114ce. I had to try about twenty different sets of strings from several brands from light to medium and with picks up to 1.14mm nylon to try to warm up a little this guitar which is much too bright and chime but nothing is wrong. done there. I will give it one last chance with an D'addario EFT16 flatwound set and if it is not satisfactory I will have to get rid of it.

It's a wonderful thing when you find your favorite string! I experiment with different strings on every guitar I acquire, and sometimes it takes me several weeks to find the best match. GREAT looking Taylor you have there...I have never played that body size, only GP's, X14's and X12's. Maybe I should...
