Doyle Dykes has a neat way of making sure no string ends poke out. Go about half way through the video for the string changing portion.

Use a white shirt to splat your music blood onto. After a few more sting changes you'll have a gigging shirt.

I use a small pair of needle nose pliers to remove the windings from old strings at the tuning post when changing them. Saves my fingers from being poked.
