I find people tend to over complicate things, they use calculators, and measure string heights plug those heights into calculators to find the angle difference, they reference pythagoras's theory and so forth.
My process for a neck reset. Identify neck angle is incorrect with our eye Adjust truss rod so neck is dead straight Remove neck Take a flat bar or flat surface and sit neck onto said surface Take body of guitar and remove saddle and sit body onto the fretboard extension Slide the two parts together until the heel of the neck touches the body. Visually you can see a mis match of angles Correct the angle on the neck to match the body with what have you, chisel, sandpaper etc Lock the neck back onto the body, be that bolts, glue, shims etc String it back up, tweak any action height with the saddle.
