The break angle issue is partially offset by the paddle heads being angled back greater than the slotheads (usually 14 degrees rather than 11). Slotheads are thicker than paddle heads so probably not much weight difference either if openback tuners are used.
Slotheads that are 12 fret to body designs usually have longer soundboards which is where I think the improvement in sound comes from. I built a slope shoulder dread with a paddle head and it sounded great. The longer body made the difference not the peghead.

My friend inherited his brother's Martin D-12-20. 12 Fret Slot head 12 string guitar. I offered to change the strings for him ..... once.
That was an ordeal.
Never again.
