flemenco tab/tunings help

I have to play Saterday at a Tapas dinner thing, I need to learn some basic spainish or flemenco tunings, scales, etc, so I can do some basic improvising. Can someone recommend a tuning that is flemenco friendly? How about a tablature and specific song that is easy and representative of the general sound that would normally accompany a Tapas dinner.
Maybe someone could even post a scale or something here. ?? Anything simple would do, just to get me started in the right direction.
