In a nutshell: the "pip" (5th) string is mostly used as a drone - enabling an idiomatic rhythmic device effectively deployed in modal (folk) forms.

The 4-string - plectrum and tenor - were traditionally used in more complex harmonic forms (song forms, jazz, etc) ... where a drone string would be unneeded and in the way.

*I've been a player of all banjo styles (including "Irish" which is a bit of an exception to the above).
