Two guitars. There is a guitar that costs $2300 that I have my eye on and that would leave enough for another guitar I have my eye on..

It would absolutely depend on what you already own. If I already had what I have, one $3000 guitar all day long. But....if you didn't already have guitars or any that you love, I would lean towards two. Probably a Martin D-18 or 000-18 (depending on what size you prefer) and a "beater" of some sort like an Epiphone inspired by Gibson J45. That might be a shade over 3k but you could sub in a Taylor GS Mini instead if your budget allows.

I personally find that owning one guitar you don't need to baby brings way more joy to playing out of the house. For me, I've had a Seagull S6, a Martin GS Mini Mahogany, and now have a Gretsch Boxcar with a round neck. Not only is it a "beater", but brings something unique (Resonator) to my herd.

So my answer boils down to what you already own.

Silly, can we remind you of this on your next NGD post?

To OP: If I didn't have a need for 2 different types of guitars at this moment, I'd probably go with one ~$3000.

I agree, $3000 was for a long time the price of a great used guitar. Lately it’s closer to $4000.

When I read the subject, I thought... $3,000 won't get a 50s Gibson or
one of those new "historic" Gibsons, but it would get a couple of pretty
good Eastmans... then I scrolled through a few posts and saw the
word "Iris"...

So my answer is hang on to the $3,000 until you can find the right
Iris...

I need another guitar like I need another hole in my head

but,, if the choice was there, and they money was given and had to spent on a guitar, probably a Hummingbird or a Dove.

then I'd have to start selling stuff cuz I'm running out of room to store them.

Gibson J-185. But that is hypothetical I guess. I probably have enough money right now to buy one, I just haven't. But if someone gave me $3000 and said that I had to buy either one guitar of two guitars with it and nothing else, that's what I would get.

I'd probably get one really nice orchestra model, I'd be OK with a Taylor.

About ten years ago, that exact scenario happened to me.

I was part of a class action lawsuit against a national insurance company. The litigation went on for ten years and most of us were convinced that at best, we would end up with enough cash for a nice meal (if our group won). When the settlement notice actually showed up in the mail, more than half of the group decided it was too much trouble to file. Because of that, the payout became much larger and I ended up with $3000.00.

I gave my wife $1000 for her ‘new car fund’ and bought a used Martin D-35 with the remaining 2K. The strategy worked out very well!

I'd either go for two $1500 guitars or one $2000 (something like an Iris OG, perhaps) and something in the $1000 range.

Life is too short to play cheap guitar and I only have two hands, so would save a bit more and get one in the 5k range.

$3k on the used market will buy you a very satisfying guitar, just not an internet darling. But when hunting, you need to have an open mind. Heck, I eMailed Bryan Kimsey looking for a D 18. He replied, no, you want the Custom D 35 a friend is selling. Now a D 35 is one of my least favorite of all Martin dreads, both tonally and aesthetically. Hate the white binding.

So he points me to a video. Hey, this sounds much drier than a D 35 should. The wood binding and koa wedge solve the aesthetic problems. The 07 build date is nothing special, but when people play it I get the if you ever sell, call me comment. A lot. It was about 2/3 your budget. It was not pristine. Not beat either. Just a really good guitar for someone that is a fan of mahogany, not rosewood. But I had an open mind and took the opportunity that presented itself.

Is it easier just to go buy a D 18AA? It sure is.

I’d probably buy a J45, maybe a used True Vintage. If you could bump it to $4k, I’d buy the pair of guitars that, for me, represents a nearly perfect pairing (with the acknowledgment that you could do far better with more money): a J45 and an OM21. Got your dread and your OM, and hog and rosewood. And I like what Martin does with its OM guitars in rosewood.
