I've been away from it for a while. I used to do minor stuff. I've really been doing this type of work about 1-2 years now.

I can't remember - I think I got them on eBay, but it was from a popular parts eBay store.

I have a spruce/rosewood and T-system pick up not the GO stuff,

I also replaced the dots by abalone dots (much better, looks 500€ more expensive) ,
the nut and saddle by bone (homemade), the tone I think is not brighter but added more sustain and clarity between notes,
the pins by black horn with abalone dot, no difference in tone (that I can hear)
the TRC I made myself from 2.5 mm thick piece of rosewood with a inlay made from white, black MOP and abalone. (hummingbird picking a flower, in the picture the pieces are lying on the original plastic trc, as a dry fit)

replaced the tuners knobs with rosewood ones I found on the bay
but I'm thinking to replace the tuners by "old looking" gold gotoh 510's one day.
further I'm thinking by replacing the pickguard by a rosewood version but don't know yet...

Did you switch out the stock tuners and if not would they be a close switch out for gotoh 510s?

What type of bridge plates do GS minis have? Would they be conducive to baggs bridge plate mics or would a k&k mini work better?

Looks great Fazool. Nice work.

For anyone who wants a similar look and doesn't have the courage (like me) to alter their guitar, take a look at this link for inlay stickers. I've used them on a few guitars and they look great, are easy to apply and are very inexpensive, not to mention totally reversible if you don't like them.
