I think we’ve found it once in a store here - many years ago, at Coastal Seafood in Minneapolis, we found a piece labeled as ‘black cod’, as it’s also known. They told us it was rare for them to have any, as it typically all goes to restaurants.

We’ve been buying fish from an Alaskan company called Sitka Salmon Shares for the last three years, and they include sablefish in the monthly shipment at least a couple of times a year. That’s how we really developed a taste for it - it’s buttery and delicious, and really hard to overcook (trust me, I’ve tried )

That sablefish does look delicious David! I’m going to ask the fish guys at Whole Foods if they ever get it.

I have a cod chowder recipe that I’ll bet it would be good in too.

This is my most recent creation... Pastitsio! Also known as Greek Lasagna.

Bucatini pasta layered with a Greek seasoned meat sauce then layered with a rich bechamel sauce... first time makin it, and it was delicious!

Baked and stuffed pasta dishes are among my most favourite things to eat. That looks terrific!

Sicilian Arancini...

I decided to make Sicilian Arancini for lunch tomorrow... so I had to start today! This is a rice ball stuffed with a meat filling, rolled in bread crumbs and deep fried to a golden brown. I have the rice and meat filling cooling. Next I will make the rice balls and leave them in the fridge overnight to let the starches bind and the rice dry out a bit. That will help keep them together when I deep fry them tomorrow.

We love to cook. For me l love cooking anything Italian, Lasagna, Baked Ziti, Fried Polenta in garlic,onion and finished with Capers and simmer sauce, etc.. We canned our simmer sauce for the first time a couple years ago, so good. We have been diving in to Asian dishes for the past year. Healthy options! We also love fish dishes. Fun!

Food is to be enjoyed! Yeah!

the following day’s meal, Christmas Day.
Beautiful Globe artichoke from the terrific people at Ocean Mist Farms in California. The premier growers of Globe artichokes in the USA. Just superb.
Lasagna, of course. It is an Italian Christmas dinner after all.
And a four bone rib roast, which just so happens to be my favorite roast!
