I recently picked up a used Takamine GJ72CE-12 BSB 12 string. The BSB version has a sunburst, but it's also offered without (drop the BSB from the model number).

I picked mine up in excellent condition for a little under $400. I love it, and the jumbo sized body and maple back and sides make it a super sounding 12 string. And Takamine's preamp pickup systems are renowned for their great plugged in sound.

I used to have a Redding 512 Acoustic, Was only two hundred and something bucks, it was a good sounding 12 string but it had a whopping great big tree trunk of a neck on it and I often struggled with it because of my small hands and fingers and it also had that problem where the strings were too far apart from each other.

Decent 12 strings that are well made have the strings nice and close to one another and it makes for easy fingering but the strings on my Redding just had that bit too much separation and as a result, I struggled with it.

Try the new Eko 12 string. I have one and it’s easy to play and sounds great especially through its pick up.

+1 on the Takamine GJ72CE-12. I have had being 2 years in December. I'm not a fan sunburst in general so I purchased the natural finish. It gets played every week. I have a "few" others that need played but I make sure the 12 string gets it's share.

I looked at several different makes, I kept coming back to the Takamine.

Yeah, that's the one I had. Jumbo! Tough to find a case for it. I did enjoy it. As I said, it inspired me to get a higher-end Guild, and I've been focused on 12-strings ever since.
