How do you go about transcribing this music? Do you go note for note?

Yes, pretty much note for note, but it helps to know the patterns, arpeggios, scales and gipsy fingerings

WOW--some impressive gypsy jazz playing. It even sounds sweet at slow speed, but that full speed playing is something else!
