At the beginning of July, in the Basque country, near Idiartekoborda's guesthouse and in the region of St Étienne de Baïgorry, it's time to cut the grass from the fields. This brings a very special smell to this enchanting landscape, a smell that I have known well from my earliest childhood, the one that preceded the smell of wheat straw. Take the time to watch the blooming honeysuckle, walnut trees and fig trees that promise a bountiful harvest. In the early morning there is only the sound of rushing water and the song of birds.
