There are multiple variables but The quick simplistic reason is that in every day circumstances you are not hearing your voice from the mic position. And you are not hearing your voice single point mono or dry
. Except of course that when singing using headphones and using the actual recording mic. With really good equipment this situation can be fairly close to what the recorded sound will be like. (albeit even in headphones there wil be head resonance that the mic won't pic up)

Sometimes the fairly simple solution is the answer, so perhaps part of the solution is actually.. First just know this is the case and don't be concerned.
Beyond that If you have a home recording set up , Just keep recording and listening back as much as possible As some already suggested after enough times of hearing your your recorded voice you get much more comfortable with it.

Further (since part of the problem is that if you record an listen to your vocal dry) the fact is in every day speaking or singing you are used to hearing it with a multitude of variable reflections happening.. or to put it another way you are hearing your voice in stereo with natural reverb and or delay . So another possible solution is the judicious use of a one or both of these effects.
