My real-deal cajun wife saves a chunk of ribs to make her red beans and rice, and smoked chicken or grilled shrimp for 'dat gumbo...'dem cajun girls can cook!
First, you gotta make the roux and she is fussy about that; no store bought roux allowed in our house. |

I did "poor mans burnt ends" a few times last year, and it was a huge hit.
Smoke a pot roast, cut into cubes, toss with some sauce, then put it on a hot grill in a cast iron skillet for a bit to caramelize the sauce a bit. My kids call it "meat candy." |
