Default Favorite back/side woods that are NOT Brazilian, Mahogany or Maple?

What are your favorite woods used for backs and sides other than Brazilian rosewood, Mahogany or Maple?

I'd say ... Sapele ... mostly because I have no experience with Koa, :-)

Old (or good new) growth Indian rosewood. (old growth in my '71)

Quality cut in both:

Amazon rosewood (as in my former HD-28V Custom)

or Madagascar rosewood. (as in my new D28 Authentic)

And I have not owned, but have played some very nice sounding/looking Guatemalan & Cocobolo rosewood.

I think most ppl would say EIR, because Brazillian is so out of reach. However, I'm hoping my newly ordered Ebony Furch puts me in the Ebony camp lol.
