Indian Rosewood gets my vote--I'd even throw african blackwood or macassar ebony into the mix as well...

Think I would actually go for the Maple. An awesome contrast.

I like the cherry! But it all depends on the top: that cherry needs a nice light spruce to contrast against, but a cedar or redwood top would need darker or lighter. There, that cleared everything up.

Default Curly Dark Koa?

Much as I hate to agree with Tom..I would go with the cherry, unless you have some dark, curly Koa around.

I'm a fan of darker bindings so from those choices, IR gets my vote. Tucker's dark curly Koa suggestion is a good one too.

...amidst the binding question, can I back-up and ask about Christie's tuners...are those Gotohs?

So the story is that we have a whole bunch of beautiful Koa in our shop, but for whatever reason, even though we have a stockpile of great wood, we haven’t had a Koa order in 10 years. We were going through our pile recently and I saw this set which I dubbed our “Ugly Koa.” As you can see, it’s not bad, but it doesn’t compare with our other sets.

I told Steve that I was going to build a straightforward 00 with it and sell it for the best offer I get. So, it’s not going to be a vote on every step, but I thought you could start it off as I build it quick.
