I guess it really depends on the particular guitar but you probably won't go wrong with an adi/mahogany combo.

That would be my close #2 choice. Cedar over Hog is excellent, especially for finger picking. ( I currently own a Taylor GS5)

Macassar ebony and spruce. This has yielded (for me) two of the most astoundingly good guitars I've ever played.

Ebony has all the richness of rosewood but far less internal 'ring' - this means no tendency to muddiness, particularly in the bass, and fat tone in the mids and trebles while maintaining clarity.

I usually prefer European spruce, because it generally has good sensitivity and full overtone content. The American Colorado blue spruce of my Baranik Meridian has all that and more.

I really want to try an Adi top Ebony back/sides guitar. They are so dang, expensive and hard to find

Another Sitka/mahogany vote here. I have played more guitars with that combo that I have liked than any other. If I were to commission a guitar, that's what I'd ask for.
